Red Velvet Cake was ma favorite all the time and never new we also can prepare @ home and when i came a cross with ma friend Garima Creation i was speechless and without second thought it will be successful or not i just note down all the ingredient and did ma shopping as well and just cross ma finger and start ma creation according to her instruction which anyone can follow up coz all in details.
And off course Garima help me when I had any query and I wonder sometime that what a mighty “Jesus” creation all the technology human made but without his instruction he can’t do anything in this world and in spite being so far frm. Indian Garima help me, thank a ton to her & Praise and worship of ma “Jesus” for being so wonderful, and at last mix ma cake ingredient and just love the deep red color with I was alwys fell in love with dis beauty the color the cheese cream frosting and melt in the mouth.
And at last starting baking love the aroma fill the whole house and was overjoyed to see the final texture and in middle when I see from the glass while baking glad to see the color. At last time is up and take ma cake out of Oven cant believe it was by me very spongy and just couldn’t stop ma self click click and send the first pic to Garima and she too was surprised to see ma texture when she comment I was top of the world coz a master comment mean which is more precious to me.
For frosting I go for her paneer creation and here in Kuwait we get lot of product but so excited to try and I was pretty sure it will taste divine and as I start it curdle felt a moment it spoil and but last got a prefect texture and taste wise it was terrific. Garima had gone when some people are unable to get the Cream Cheese and I feel in the market it might be quite expensive in India so believe me can for Paneer frosting u will just love and not at all regret for the texture and taste wise.

Maida 1 ½ cup
Sugar 1 cup
Butter 1/2 cup
Butter milk 3/4 cup
Baking powder 1 tsp
Cocoa powder 1 Tbsp
Vanilla extract Tsp
Liquid Red food colour 1 Tsp
Preheat the oven to 170C and baking pan keep a side.
Take a medium sized bowl, sift flour, cocoa powder and baking powder 2-3 times & keep a side
Now take a big bowl, beat the butter and sugar till creamy texture. Now add the egg (one by one) to the Creamy texture of butter-sugar and mix well.
Now slowly add the buttermilk and mix. Then add the red food colour which I mentioned above but I add more coz to get a deep color you can add according to your desire color. Now slowly add the flour (you can bake in two batches but I bake in one and then cut into too for frosting. Now add the vanilla essence.
Bake for 30-35 minutes and check by inserting the toothpick if it come clean it is done . Let it cool fully, cling wrap and refrigerate for an hour. It will help to slicing the cake neatly.
In a meantime can make the cream cheese frosting.
For Cream Cheese Frosting
Fresh homemade cottage cheese 200 grams (I prepare @ home)
Thick Yogurt/curd 2-3 Tbsp.
Powdered Sugar 1 Tbsp.
Heavy Cream 200 ml
Vanilla essence ½ tsp
Crumble the cottage cheese and blend with the powdered sugar and 2 Tbsp of yogurt adding more yogurt only if required. Ensure that the yogurt/curd should not be too sour. The cream has to be thick and smooth texture
Beat the heavy cream till stiff peaks form and gently fold in the cream cheese and the vanilla essence.
Now remove the cake from the fridge and with the big serrated knife slice horizontally into two halves
Spread the cream cheese frosting between the two layers of the cake. Cover the top and the sides generously. Smooth over with a wet spatula. I love da rustic look.
I go for cottage cheese coz too yummicilio then cream cheese each one has different taste but has to give a try with cottage cheese n guarantee ur’ll will like 🙂
