◇ Butter Cake ◇

Ingredient’s:

3/4 th cup sugar
1/3 rd cup water
125 gm butter
1 teaspoon vanilla essence
3 eggs seperated
1 1/2 cup flour / all purpose
1 tsp baking pwd.
Generous pinch salt.

Method :

Combine sugar and water in a pan. Mix it with a whisk. Now put the pan on low heat.

Keep stirring for the sugar to dissolve.After it has dissolved,  increase the heat and bring it to a boil.

Once boil  remove from heat. Cool it thoroughly, let it come to room temp.

Take a bowl add butter, eggs yoke beat for 2 minutes add vanilla essence. Beat till light, creamy pale yellowish color.
 
Now with mixer on low speed take the sugar syrup and pour it slowly in a thin stream and continue beating, into the egg mixture!

Use up the whole sugar syrup this way! Always scrape the sides well, with a rubber spatula! 

Stir in the flour all at once.Mix it gently, scraping the sides.

Now beat the egg whites to soft peaks. Fold half first, then rest of it.into the mixture! Pour the batter into a well greased deep 20 cm round tin preferably.

Bake at 170 c till the skewer comes out clean! About 45 mts.

Self raising flour  at home :

Plain flour 2 cups.
Baking pwd 1 tbsp.
Salt 1 tsp. mix well.
sieve well 2 times.
Keep in airtight jar.
