2 cups of steamed rice
1 cup cooked peas
1 cup cooked chopped carrot
3 tbs olive oil
2 cloves of garlic, minced
1 tbsp. Red chilly paste (optional) I dont use coz of kids.
2 hot chilli peppers, finely sliced
1 tbs of thai soy sauce
Pinch of salt and pepper
Finely sliced green onion
Sautee garlic, chilli, red chilly paste ( i dont use) and oil in low heat, until fragant.
Add egg, turn into high heat , add carrot and peas.
Add rice, soy sauce, salt, pepper, scallion, mix well & ur thai rice is ready.
serve hot with any gravy.
Red Chilly Paste
8 to 10 Kashmiri Red Chilies
1 Tbsp Black Peppercorn
4 to 5 Garlic Cloves
1 Tbsp Coconut Vinegar or White Vinegar
1 Tbsp Cumin seeds
1 Tbsp Coriander seeds
lime zest – 1 tbsp
1 medium Onion
Salt To Taste
Deseed the red chilies and soak them in warm water for about 15 mins.
Roast the cumin, coriander and cardamom separately in a pan until brown and fragrant.
Drain the red chilies & all the other ingredients in a blender and grind dry – without adding water.
The paste could be refrigerated for about a month or frozen for up to a year
