First of all Thanks a bunches to darling Kirti Gupta ma Preetttyyy gal, for dis beauty i was so immpress to see dis beauty for her creation and couldn’t resist ma self to prepare dis and @ last i made. It was yummicilious taste wise and glad i did I alwys love to have varieties coz i m a lover of Pickle.
And just love da way it was crunchy and yummy coated with yummmy masala and had with flat bread and dis goes well for this prefect for Winter well i just finished ma whole batch and enjoy every bit and this was ma story with Kirti Creation if u try dis beauty sure u will not regret coz this is endlesss beauty & anyone can’t say NNNNNNNNNOOOOOOOOOOO to dis beautiful Veggie Pickle.
So ma creation with Kirti Gupta Recipe is listed below :
Radish / Turnips 150 grm. ( I use Radish – Chopped into medium)
Carrot 150 grm (Chopped into Medium)
Cauliflower 150 grm (chopped into medium)
Green Chilly 150 grm. (Chopped into medium)
Mustard oil 1 1/4 cup
Onion medium 3 large onion ( ground)
Garlic 1 whole pod (ground)
Ginger 3 inch (ground)
Garam Masala Pwd. 4 tbsp. (can add 6 tbsp. but i add 4)
Mustard Seed Pwd. 6 tsp
Red Chilly Pwd. 3 tsp. (Can use 3 tsp. – but i add 3 tsp.)
Jeera Pwd. 6 tsp.
Turmeric Pwd. 1/2 tsp.
Jaggery 300 grm. (brown color – cut into small pieces)
Vinegar 3/4 cup ( Apple Vinegar)
Salt to taste.
Cut the veggie into medium piece and blanch for 3 to 5 minutes and then drain the water and let it dry under the sun or wipe it in kitchen towel and let it dry completely.
Take a bowl add Vinegar & jaggery mix well and keep a side.
Take a wok add mustard oil and let it heat to a smoking point then reduce the flame and wait for 3 to 4 minutes. Add the grounded onion, garlic and ginger paste saute for 15 to 20 minutes till it change it’s color into brown.
Now add all the dry ingredient except salt. and saute for few second and add all the dry veggie and cook for 5 minutes add salt and add the vingar and jaggery syrup and check the salt according to your taste. & mix well all the veggie has to coat well with da masala well.
Let it cook for few minutes and close da flame.
Store da mix veggie pickle in an sterilizer jar and keep for sub dry for one week / or for temporary it stay even for a month.
But mine just vanish so fast.
