There’s nothing Better than a Hot Non-Veggie gravy over the “Weekend Feast” for family lunch. Well I share earlier green gravy with chicken our goan specialty and ma mum recipe too, this time I do share green gravy with a bit twist.
As we had gone out with kidos as their just finish their exam & wanted to treat them had gone for dinner @ restaurant had Mutton Gravy couldn’t resist the taste was aws. And just remember ma mum gravy recipe with green coriander and wanted to get brownish color so add dry kashmiri chilly. And got the thick gravy fried the onion and tomato mashy and got the exact consistency desire, well weekend is ahead so if u love ma Mutton Gravy with a twist do try and give me da feedback.
And ma daughter insist mama to do for her over weekend and when daughter insist mama how can I say “No” to her so, just try this beauty & believe me I got the exact color, and taste was too aws. Approve by ma Master Chef Ma cute Sonshine.
So ma Mutton twist gravy with Pulao noted below :
1 Kg Mutton
3 Onion Medium
1 Tomato big.
¼ tsp. turmeric pwd.
Fresh coriander leaves for garnish.
Salt to taste
For Gravy Masala
1 bunch of coriander
½ tsp. Cumin seeds
1 Star Anise
2 Red dry chilly
6 garlic cloves
1 inch ginger
1/2 inch Cinnamon
2 green cardamom (elachi) / in case using black use 1 piece.
Little water to blend da masala.
Cut the mutton into cube or according to desire (I use both ribs & meat) wash and apply salt, keep a side.
Take a blender add above gravy masala ingredients and blend with little water to smooth paste, in meantime cut the onion & tomato into strip.
Heat oil in a deep pot / cooker (i use Cooker) add onion finely sliced onion & pinch of salt, and sauté till it is translucent add turmeric pws. sauté a second then add tomato sauté till it mashy.
Now add the mutton and sauté till it turn brownish, then add blend masala mix well see that mutton should coated with the masala mixture.
Then add 1 ½ cup water close the lid let is cook on low flame till done. This may take 25 minutes or with 4 whistle close the flame check the salt adjust with the taste.
Sprinkle coriander leaves and serve hot with Pulao / any rice dish.
Ingredients For Rice :
2 Cup Basmati rice
2 Onion medium
1 Tomato medium
A pinch of Turmeric Pwd.
4 cup water
2 tbsp. Milk.
salt to taste / maggie 2 piece
Wash the rice and set aside. Chopped the onion length wise, and tomato.
Heat oil in a large pan/pot and add onion sauté till translucent. Then add in the tomato and sauté till it is mashy.
Add the turmeric pwd. (according to the color I use less coz I don’t like too dark). and tablespoon of milk ( help prevents the rice from getting sticky), add water and Maggie / salt stir.
Add the rice give a quick stir, let it cook on medium flame, check the Maggie / salt if desire add more & cook till water evaporates. Put off the flame.
Serve hot Mutton Gravy with Rice / Roti.
