Bolinha are a traditional and signature treat of Goan dessert. And in Portuguese it’s call Bolinhas de Coco. As Goan and Portuguese cultures are strongly bind historically, this dessert shows the great fusion of both cuisines. These are sweet and smoothly tasting cookies made with grated coconut, cardamom, eggs and it’s unique flavor, it pretty jiffy to prepare and prefect to cooking up in batch.
This Cookies I really delish when I was a child my mum use to prepare these cookies, an kept to relish at tea time and it’s paired with a Cuppa black tea, because it’s sweet and I prefer black tea, it depends on each choice, well with cookies an black tea we use to sit in Balcony and relish, I really miss those day, well back to cookies.
These cookies mine & my princess favorite too, I am glad she too relish, my traditional food, since they are missing a lot being far away from Goa, but I make a point to treat them the Goan Traditional Food what my mum use to treat us when we were kids.
Let begins with cookies (updated new cookies tired and tasted do try for your family and impress them ) and i m sure each one will sure love this beauty and crunchy cookies, so friend no need to make up ur mind just get start to treat your family with this cute cookies.

⛄Happy Holidays with Gorgoues baking ⛄
Cuisine – Goan.
Recipe Courtesy My Mum.
1 Medium Sized Coconut
1/4 Kg Rawa
1/4 Kg Sugar
1 Tbsp Ghee
3 Tbsp spoons Maida
10 Almond / Cardamon
1 Leveled Tsp Baking Powder
1 Egg White to brush cookies
1 tsp. Cardamom
1 Pinch Salt
Make a sugar syrup by heating the sugar in 1/2 a cup of water, while the sugar is melting on a slow flame, grind the coconut in 1/4th cup of water.
Once the coconut is ground, stir the sugar that should have nearly dissolved by now, Add the Rawa to the sugar syrup and incorporate well.
Add the ground coconut to this mixture, incorporate well and add the pinch of salt, add the ghee and keep stirring it, Until it incorporate well.
Once you stir it up, you can take the mixture off the fire, separate the egg yolks and egg white in a bowl add the egg yolk in the cookies mixture, incorporate well then add cardamom, incorporate well then maida and baking powder, incorporate well.
Now beat the one egg white till its fluffy., add it to the cookies mixture. and incorporate well, cookies dough’s ready keep for 3 – 4 hours or over night ( i Kept over night)
Preheat the oven to 180 C , next day or after 3 – 4 hours take a cookies mixture made a round shape and flatten it on top, do the remaining cookies mixture and then, take a bowl add egg white and beat with 1 tbsp. water and brush the cookies and then press one almond / cardamon on top, now get ready to bake.
Grease the baking tray, and place them in tray leave the space in between cookies, and bake them around 15 – 20 minutes and see if the base is firm by moving a Bolinhas on the tray. If its cooked, switch over to top heat and bake till the top gets lightly pink or slightly brown, switch off the oven and take out Bolinhas and let is rest till cool, meantime make a black tea, and relish with Bolinhas.
Take a dough and shape it like cutlet. Flatten the top of it an next get a butter knife to press a few lines into the dought to make a design.
You can store the above mixture either overnight, for 6 to 8 hours or do it instantly. Its best you store it for a few hours and then proceed.
Can also use Almond or Cardamon to bake it equallly taste awsome
